French Bread

1 package yeast
2 cups lukewarm water (about 110 degrees F)
1 1/4 tablespoons salt
1 tablespoon granulated sugar
5 to 6 cups all-purpose flour, unsifted

Add yeast to water, salt and sugar. Stir until yeast dissolves. Beat in flour, one cup at a time. Add flour to make smooth dough. Knead until smooth, using as little flour as possible. Brush top and sides with oil. Cover and let rise until double in bulk.

Sprinkle a baking sheet with cornmeal.

Turn dough out and shape into two large loaves. Place on prepared baking sheet. Let stand to rise for 5 minutes.

Slash tops, brush with water, and sprinkle with sesame or poppy seeds if desired. Place loaves in cold oven. Set oven to 400 degrees F. Put a pan of boiling water in with the loaves. Bake for 40 to 45 minutes.
